First out was the shark's fin soup loaded with generous large pieces of shark's fin in a savory, unami rich slightly thickened broth topped with steamed shelled crab meat. It was served in a a cute vessel with a candle underneath to keep the soup piping delicious hot. There was only two of us, but there was easily enough for four. This is available by special request only as it takes the kitchen a day or two of prep work.
The deep fried pigeon was out next with its skin nice and crispy and the meat moist and tender. The most sought after part on deep fried pigeons is the head for the brain. So I tried it for the first time, and while the head could have used a bit more time in the deep fryer to make it more crispy, the tinny bit of brain inside was creamy and similar to eating fois gras.
We had some nicely executed pea shoot tips sauteed in garlic for veges
We also had the beef black pepper sauce. So simple, but so delicious, we kept on picking at the tender savory cubes of beef it long after we were gut bustingly full
Lastly for dessert - this one wasn't on our choices for wedding dinner desserts, but the chef had just made them fresh, so we enjoyed sweet red bean past filled mochi balls rolled in coconut.
