First off, this cake was layered, with all the apples on the bottom. Peel, peel, core, core, dice dice... and toss in 1/2 the nuts
Then you mix up everything but the caramel ingredients and plop it semi-neatly on top and top with remaining nuts
Boil the caramel ingredients briefly and dump into the pan (I had reservations about this as it looked like it flash cooked my dough
Then bake until its done and you get a layer of bread pudding like cake on top, and a gooey layer of apple caramely goodness on the bottom. I found the caramel part didn't really stand out, but the bottom was a really tasty apple pie like filling.
Baked in a huge pyrex pan from this set I bought a while ago Pyrex 1093838 Easy Grab 19-Piece Glass Bakeware Set with Blue Lids mainly as I wanted to be able to see the lovely delicious layers. And yes, watch for Apple Cinnamon Caramel Pudding Cake v2.01... cuz I'm still hankering for what I had baked and tasted years ago.. and I still have a lotta apples to bake!
Ingredients
-2 cups all-purpose flour
-1/2 cup white sugar
-1/2 cup brown sugar
- 2 teaspoons baking powder
-1/2 teaspoon salt
-2 Tablespoons ground cinnamon
-1 cup milk
-1/2 cup chopped walnuts
-3-4 apples - peeled, cored, and diced (enough to cover your 9x13 pan)
Caramel ingredients
- 1 3/4 cups packed brown sugar
-1 1/2 cups water
-2 tablespoons butter
*Make this a gluten free recipe if you use a gluten free "flour" mix and GF baking powder*
How to
1. Preheat oven to 350 degrees F (175 degrees C). Peel, core and dice your apples to cover the bottom of a 9x13 pan.
2. In a large bowl, mix together the flour, sugar, baking powder, salt and cinnamon. Make a well in the center and pour in the milk. Mix well and plop into prepared pan covering up the apples evenly. Sprinkle with 1/2 the nuts.
3. In a small pot bring to a boil the brown sugar, water and butter. Carefully pour over batter in the pan. Sprinkle with rest of nuts.
4. Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake part comes out clean. Serve warm
